Roasted Asian Salmon

This is super easy and absolutely foolproof and fabulous – I served it to 14 people and kept getting emails asking for the recipe. It is from the kitchen of Rosie Schwartz.

Makes 4 servings

1 tbsp light mayonnaise

2 tsp Dijon mustard

1 tbsp honey

1 tbsp sodium-reduced 15 mL soy sauce

4, 4-6 oz salmon fillets

1 tbsp sesame seeds, toasted

Preheat oven to 425F/ 230C. In a small bowl whisk together mayonnaise and Dijon mustard until mixed well. Add honey and soy sauce; mix well. Place salmon skin-side down in a large baking dish. Coat with mayonnaise mixture. Place in oven and roast for 15 to 20 minutes or until fish is cooked through. Sprinkle sesame seeds over the salmon and serve. You can also marinate the fish and leave in the fridge for several hours.  Serve with grilled bok choy or any green vegetable. (Actually you can serve it with whatever suits your fancy.  It’s delicious!)
