Sautéd Pasta* Shrimp and Veg

• This is a pretty standard recipe but I used a 100% organic Penne gluten free pasta called GOGO Quinoa. The pasta is made from Rice and Amaranth. Here’s how I made it:

Ingredients

Asparagus – thin stalks (as much as you like)

Grape tomatoes – two handfuls (what can I say that’s how I measured!)

Orange peppers – 1 small pepper

Frozen shrimp – 6 per person

4 garlic cloves chopped finely

Pepper and salt (salt is optional – I don’t add much)

1 tbsp olive oil

1 tsp chili olive oil (optional and you can use any flavoured oil)

Directions:

While a pot of water is boiling for the pasta, lightly sauté the vegetables (not the shrimp). Toss the flavoured oil – I used chilli oil) over the raw shrimp. When the pasta is done (gluten free pasta sometimes takes a bit longer to cook than regular pasta) add the shrimp to the veg and sauté  for a minute or two while the pasta is rinsed and drained.  Then add the pasta to the pan and continue to cook until all the shrimp are pink.

Finish the dish with a touch of olive oil mixed in to give the pasta and veg a shine and then top with grated parmesan cheese.  A quick and easy dish.

    • It is super easy and very yummy – add whatever you have in the fridge – the Shrimp just makes it a bit special.
