Apple Cranberry Coffee Cake

I am not a baker  – I admit that freely – I love to cook but baking is an exact science.  I did however come across this recipe some time ago in a Homemakers magazine I think for a very simple coffee cake that is a delicious and super easy to make.

Apple Cranberry Coffee Cake

Makes 8 servings

Topping: 2 cups thinly sliced peeled apple

.25 cup packed brown sugar 1 tbsp lemon juice

.75 tsp cinnamon

1/3 cup dried cranberries


1 cup all purpose flour

.5 tsp baking soda

.25 tsp salt 2 tbsp butter softened

1/3 cup sugar

1 egg

1 tsp vanilla

.5 cup plain yogurt (2%)

2 tbsp sliced almonds

• Preheat over to 350º – spray 8” round cake pan.

• Combine all topping ingredients in a small saucepan. Cook over medium heat, stirring often for about 5 minutes or until apples are tender. Drain.

Cake: Combine flour baking soda and salt. Cream butter and sugar in small mixer bowl until blended. Add egg and vanilla, beating until smooth. Add flour mixture and yogurt alternately, mixing lightly after each addition. Spread batter evenly in pan. Arrange apple mixture on top. Sprinkle with almonds Bake at 350º for 23 -28 minutes until cake starts to pull away from sides. Cool 10 minutes.
