Easy Apple Cranberry Sauce

I made this cranberry sauce last Xmas and it was delicious.  Pretty simply and once again not very low calorie – but then you only take a small amount…..right? I think I got this recipe from a friend last year and I do not remember who it was, so whoever owns the recipe – I thank you!

1 tbsp (15 mL) vegetable oil

1 small onion, minced

1 pkg (340 g) fresh cranberries

3 small cooking apples, chopped ½” cubes

1/4 cup (50 mL) packed brown sugar

2 tbsp (25 mL) cider vinegar

1 cinnamon stick

Pinch each salt and pepper

Preparation: In saucepan, heat oil over medium heat; fry onion, stirring occasionally, for 4 minutes. Add cranberries, apple, brown sugar, vinegar and cinnamon stick; bring to boil. Reduce heat, cover and simmer, stirring 2-3 times, for about 20 minutes until cranberries have burst and apples are fully cooked. Add salt and pepper. (Make-ahead: Let cool to room temperature; refrigerate in airtight container for up to 2 days. Serve at room temperature or hot.) Discard cinnamon stick.
